Our fruit conserves are processed in the tradition of old Eastern European recipes, called Varenye, whereby the main fruit is preserved whole and is sweetened with honey. We use NO PECTIN and NO CANE SUGAR in our recipes. We rely on pairing the fruit with our varietal honeys to create a gourmet treat that is both visually stunning and exceptionally delicious. In summer, we hand pick our cherries from the Finger Lakes region of New York, combine them with our own buttery goldenrod honey, and infuse them with fresh rosehips from the native Rosa virginiana that surround our beehives. The result is a vitamin-rich fruit syrup that can be used in tea and serves also as an excellent topping for meats, cheeses, pastries, and various desserts.
